This popular technique involves submerging the turkey into a salt-water solution dry brining in salt, for around a week before you cook it. The end result is moist, well seasoned white and dark meat. We've had great results with brining and heartily endorse it, although our method here will still work without brining.

Prepare the turkey for roasting. About 30-60 minutes prior to roasting the turkey, open the fridge. Take out any plastic wrap and bag of giblets. Check the cavity in the neck and body cavities. Let the turkey rest breast-side down on a rack placed in a pan. The roasting rack removes the chill from the meat which allows it to cook more quickly and evenly. Also, it allows the skin to dry. This promotes crisping and browning. Note: After sitting at room temperature, your turkey may still feel cold to the touch. This is fine. You can then roast. Pre-heat the oven at 450°F. Move an oven rack to the bottom third, then heat your oven to 455. You don't need to do much if you have already brined the turkey as we did. You can rub the turkey with salt and pepper right out of the box before you put it in the oven. Un-stuffed turkeys are easier to prepare and cook evenly.

You can add liquid to your roasting pan. Pour the water or broth into the oven when it is time to roast.

To baste, tilt the pan if needed and use a turkey baster or spoon to scoop up the pan liquids and drizzle them on top of the turkey. The pan juices can cool the turkey's surface and reduce the cooking time. This will allow the breast meat to cook at the same pace as the legs or thighs. You can brush the turkey with butter or oil in the final 45 minutes of cooking. This can help crispen the skin and give it a deep, golden brown color.

Check the turkey's temperature. Start checking the temperature of the turkey about half way through the cooking time. The temperature should be checked in the following three areas: inside the thighs, the outer thigh and the breast (see the photos). When the turkey is done cooking, it should reach a minimum temperature of 165°F. To ensure that the turkey does not get below this temperature, place it back into the oven to bake for another 20 minutes. Shield the breast meat with foil if needed to keep it from overcooking.

The turkey should be allowed to rest before being carved. You should remove the turkey from oven. Grab one side of the roasting rack with an oven mitt and tilt the whole pan so the liquids inside the turkey cavity run out into the pan. These juices will be used to create the gravy. Once the turkey is removed from its rack, transfer the meat to a plate or cutting board. Let the turkey rest in aluminum foil for 30 minutes. Allow the turkey to cool down and allow the juices from the muscles to be absorbed. The result is a more sliced and deliciously flavored turkey.
